Penne with Broccoli Sauce
(Serves Four)

Mixture 1 lb Penne pasta 1 small onion, chopped fine 2 cups broccoli florets 4 cloves garlic, sliced thin 2 Tbsp Pine nuts 4 ripe olives, pitted and chopped 4 green olives, pitted and chopped 4 cups vegetable stock
Prepare the pasta according to directions on the package.
In a heavy pan over medium heat, sauté the garlic and chopped onion until the onion is translucent and the garlic starts to brown. Add the rest of the ingredients and sauté briefly, stirring frequently, then add the vegetable stock and simmer, uncovered, until the liquid is reduced by half.
Remove from heat, mix with the pasta and serve immediately. Sprinkle with a little grated cheese, if desired. |
