Wine Cellar

The Azienda Agricola Zymé has set itself the goal of achieving distinction because of uncommon choices. This winery has done this through its production of wines, grappa, and olive oil. Our feature wine, Kairos, is a wine of significant quality and convenience for the wine consumer.

Zymé derives from the Greek term for yeast and ferment. Founded in 2000 as the outgrowth of a preceding brand, it has now become a full-fledged Azienda Agricola also known as "farming estate". Its new title signifies research, selection, and expression of experience; married to everything nature provides. The estate winery itself was founded in 2003 with the guidance of Celestino Gaspari, Francesco Parisi, and Flavio Peroni. The motivation for funding the winery is simple but complex.

Celestino Gaspari's relationship with the earth has always been close, a personal past with influence and expression. His many experiences in various environments did nothing to lesson this bond; instead, they served to strengthen it. After years of assisting winegrowers, which brought the advantage of an understanding of local lands, he is able to give life to a dream that for too many years existed simply on paper. Francesco Parisi and Flavio Peroni have added their contribution to this vision, functioning as a mediating influence between the real and the impossible. Coming from different histories is what enriches this project, since different perspectives and a critical spirit are brought into it.

Kairos in Greek means opportune, convenient, and timely. It is made in the same vineyard as the Harlequin wines. The vines are merged exactly the same way, however the qualities of the two are somewhat different.

Kairos wine is made from at least 15 grape varieties from the province of Verona. These grapes are carefully picked for its particular ripeness. They are then placed on drying mats until the end of harvest. After harvesting, the grapes are de-stemmed and then fermented in stainless steel tanks with manually handled must and pomace. The winery does not use cultured yeasts or other biotechnological aids in fermentation resulting in a natural, robust wine. Fermentation and pre- and post-cryomacerations take a total of 20-25 days. Eight to ten days after "drawing off", the wine goes into French oak barrels where it rests at least 24 months with no racking.

Kairos is a dark red wine, which is deep purple tinged and appears red. The rich fragrances ranges from fruit conserve to wild red berries and cherries, then offers spicy nuances of cocoa, vanilla, and cinnamon and an appealing balsam-like finish. This particular wine is smooth on the palate. Its flavors complement each other into a luscious, drinkable wine with a long-lingering finish, you won't forget.

LETTERS

To everyone at Villa Umberto,

Last Saturday our daughter Kristin turned 16 years old. We celebrated her birthday with friends and family at your catering hall in the Verdi Room. It was truly a memorable event and Kristin had the time of her life. We can honestly say that it was thanks to all of you at Villa Umberto!

The food was delicious. The DJ (Chicago Joe) recommended by you, did a wonderful job...everyone was up on the dance floor for the entire evening. What really capped off the evening, though, was the wonderful job done by all of the staff at Villa Umberto’s. From the moment we got there they couldn’t do enough for our guests or us. They were attentive, friendly, professional, and caring.

When our family first got there we noticed that the menu cards had spelled Kristin’s name wrong. Donna, one of the staff, immediately took control of the situation and had all the cards on every table changed with the correct spelling... and this was just 30 minutes before the guests were due to arrive. Donna proved to be a true treasure that evening and her daughter was just as lovely! Please convey to Donna and her daughter our thanks and appreciation. Everyone else was just great. The bartender was helpful and kind as was the rest of the staff.

Lastly, we’d like to thank Ciro. He was with us from the beginning...helping us plan the event and taking all our phone calls and spending time with us going over the menu, seating, etc. He was there the entire evening, making sure everything was running smoothly. He is a true gem. He is an asset to Villa Umberto’s and a fine young man.

If you ever need a recommendation, please don’t hesitate to contact us. We would recommend you to everyone. All of you were just fabulous. You helped make our daughter’s dream party a reality and we thank all of you from the bottom of our hearts. Keep doing all the wonderful things you do.

Thanks a million!
Glen, Lisa and (of course) Kristin Cacchioli

Dear Ciro, John & Rosario,

We recently celebrated our mom’s 75th birthday party at Villa. I wanted to thank you and your staff for an excellent job. The food and service were outstanding.

We received many phone calls the next day complimenting the service of the waiters and especially the delicious food.

Thank you once again for making her party a day she will always remember!

Doreen & Dominick Stagliano

Ciro & Staff at Villa Umberto,

Thank you very much for hosting our engagement party and making it as fun and beautiful for everyone. The service was impeccable and the food was delicious. Everything went absolutely perfect. Every detail was in place and nothing was left for my fiancé & I to worry about. Once again, thank you very much.

Love,
Vincent & Mary Elena

Dear Ciro & everyone at Villa Umberto’s,

Thank you for making Rachel’s Christening party perfect! Everyone loved the place and the food. The service was excellent and we received many compliments on the party. Thank you for everything you did to make the party so special for us. We look forward to celebrating another occasion with you.

The Benson and “Codino” Families

To Ciro & Staff,

Sincere thanks for the wonderful job you did for our 50th anniversary, you made it special. Our guest were so pleased with the presentation, the food, waiters, bartenders and especially you. The D.J. Chicago Joe did a great job.

Thank You,
John & Kay Stacom

Last night I attended the birthday party of Buddy Jackson at Villa Umberto’s. I was so impressed by everything that I had to write a letter complimenting the entire staff. I have never been to an event where everyone, especially the woman who was bartending and our server, Tullio, could not do enough for you. We were early to arrive and the bartender could not have been more accommodating to make us feel welcome and get us a drink. Our server, Tullio, was always asking if he could get us something or help in any way. The men who served the food, also were so pleasant and courteous. The food was outstanding, also. The entire evening could not have been any nicer. Thanks for a great evening and such a terrific staff.

Sincerely,
JoAnn Canny
