Pinot
Noir may be the toughest grape to grow; but it is
well worth it in the end. It demands optimum growing
conditions, requiring consistent warm days followed
by cool evenings. Walt and Joan Flowers' Vineyard
and winery have perfected this by locating
themselves on a tiny corner of the Sonoma Coast
American Viticultural Area. These vineyards are
situated on top of ridges varying from 1150 to 1875
feet in elevation, running parallel to and less than
two miles from the Pacific Ocean. This particular
area, considered the "True Sonoma Coast," is home to
the Flowers' two ranches: Camp Meeting Ridge,
planted to Pinot Noir and Chardonnay, and Flowers
Ranch, planted exclusively to Pinot Noir. These two
ranches extend a total of 648 acres.
Flowers Ranch is comprised of a lot of acreage with
only a small amount planted to vine reaching elevations
between 1400 and 1875 feet. The 327 acre property was
developed in two phases corresponding to the soil type,
aspect, and microclimate stretching among two vineyards:
Francis Thompson Vineyard and Sea View Ridge Vineyard.
Views from the ridge-top vineyards are unobstructed,
offering a 360 panorama of the surrounding mountains,
valleys, and coastline. With its expansive vistas and
carpet of valley fog below, the site offers fruit of
incomparable quality and visual drama as well.
All grape vines are hand-harvested early in the
morning into small bins. This ensures proper delivery to
the winery. Hand cluster selection begins on custom
built shaker tables. Pinot Noir clusters are dispersed
and gently conveyed to the next sorting table where 6
sorters can assess the clusters that will be allowed to
go through the fermentation process. These Pinot Noir
clusters are then de-stemmed to ensure gentle handling.
This provides for at least a 75% whole berry environment
in small open-top fermentors. Pinot Noir is then
cold-soaked for 5-7 days at 45 degrees Fahrenheit, where
hand punching down begins for a maximum of twice a day.
After this cold-soaked period, the fermentor warms to
68-85 degrees and wild yeast carries the fermentation to
show terrior and complexity. Free run wines are then
drained to barrel and the remaining skins are gently
pressed in a small-old world basket press. All wines are
aged between 14-16 months in small barrels from Burgundy
Coopers. The wines are bottled without the use of
sterile filtration and no fining occurs. The wines
receive additional bottle age in a temperature
controlled cellar and released annually to fine
restaurants and retailers in the U.S. and overseas.
The 2005 Sonoma Coast Pinot Noir offers crisp
acidity upon entry unfolding with flavors of black
cherry, raspberry and hints of lavender. Tannins are
supple creating a lingering finish with anise and notes
of toast. This wine can be enjoyed now or cellared up to
4 years.
Dear Franco, Rosario, & Staff,
We would like to thank
you for a wonderful evening at the "Wine" Dinner. It was so
well organized and one of the nicest dining experiences. The
food was excellent, the wine delicious, and the service fit
for a King.
Your restaurant is our
favorite and we love bringing all our friends and out of
town guests for the best food and service!
Thank you again for
including us on that very special night. You and your staff
deserve a big "Salute".
Sincerely,
Chris & Julie Cortese
Dear Rosario, Franco, Santos and
Staff,
Joe and I would like to thank you for
making our Wedding Day so special. Some of our guests had
never been to the restaurant and could not stop talking
about how delicious the food was. We knew when we started to
make our plans that the luncheon would have to be King
Umberto's. Through the years we have enjoyed many dinners,
special occasions, and New Years Eve celebrations with you
and we feel like you are all part of the family. You have
given us great memories of our Wedding Day that we will
never forget.
Thank You for putting that extra
special touch in everything you did for us.
Love,
Laura & Joe Russo
Dear Rosario,
Franco, Elvin and Staff,
Thank you for being so
attentive to our needs for our daughter's 1st Communion
celebration.
The Food was exquisite,
the service impeccable. We had a wonderful time.
Best Always,
Karime & Hernan Villegas
Rosario,
I just wanted to take a moment to thank
you, Franco, and Denise for making everything as perfect as
usual. We were not only celebrating my nephew/godson’s
graduation from St. John’s Law but my apparent success over
cancer. It was good not only to be with family but to be
able to enjoy that time also.
You know how much I love King
Umberto’s. It’s like home to me. And as you also know, I did
not miss the opportunity to come eat there after every chemo
treatment. I think that helped with the success of the
battle. I will never forget it.
As long as there is an event in my
life, a special occasion or I simply need to feel at home, I
will always come to King Umberto’s.
Mille Grazie, Mi Amico!
Ciao,
Sonny Grosso
To Whom It May
Concern,
On June 3rd I had the
pleasure of having my daughter’s graduation dinner at your
restaurant. I had never been there before and came on a
recommendation of a friend. I was so pleased with the food,
service and the attention given to me and my family. Your
white glove treatment made our day. I would highly recommend
King definitely to friends and family and will definitely be
back. Words can’t express how thankful we were that all
turned out wonderfully and my daughter’s day was perfect.
Thank you so very much!
